Made a little "healthier" subbed extra thin wheat noodles, egg beaters, turkey bacon and reduced fat cheese, and half and half instead of heavy whipping cream (not healthy, but delicious in moderation!!!)

lentils

So, moving to Austin has been amazing so far, but moving is pretty expensive, and I'm finding out first hand that there is a reason that so many people in lower socioeconomic brackets are overweight. it's something I clearly knew, but now that I'm really trying to stick to a budget to pay off this move (and now that I'm paying rent, and don't have a dining hall) it's something that I am experiencing first hand...

Good food is expensive.

Carbs, the 99 cent menu, and stuff that is uber refined is cheap.  I'm trying to buy veggies in season and frozen in bulk, and to eat less meat (which is hard if you still want to get your protein) but I have really been eating a lot of lentils. I'm trying to stay away from my "I'm broke go to foods" like ramen (who can eat that much salt and not dehydrate?) and prepackaged stuff (wait, this rice is 43% of my saturated fat for today? wait, the serving size is a 1/4 of a cup?!?!) and it's always hard for me to stay active when I don't have a gym membership or a dedicated water aerobic class... (no officer, i live in this complex, this is totally my pool, just ignore the glora estefan on my boom box and the 90 year old women I brought in to make myself feel like I'm moving at a reasonable pace...)

Anyway, there's no picture this week, because let's face it folks, lentils ain't pretty. but they taste pretty dang good.
